Two solutions off the top of my head: re-adjust the mesh's UV's or do a higher quality model and bake the higher quality texture to your current lower quality one.
oh... i thought the fingers were fine... what do you expect your zombie to have perfect fingers? i think they would be broken, from cracking open skulls... i guess...!

what you should do is not worry about fingers... make the hand solid! (done by many games... would not be considered "horrible" especially in quake!)

You need to fix the triangles, the UV's are stretching in an odd direction.
